Healthy Barbecue Chicken

Serves 8
Serving size: 1 chicken piece with sauce


3lb chicken pieces (breast, drumstick and thigh), skin and fat removed
1 large onion, thinly sliced
3 tbsp vinegar
3 tbsp Worcestershire sauce
2 tbsp brown sugar
black pepper, to taste
1 tbsp hot pepper flakes
1 tbsp chilli powder
1 cup chicken stock or broth


Place the chicken in an ovenproof pan or dish. Arrange onions on top.

Mix together the vinegar, Worcestershire sauce, brown sugar, pepper, hot pepper flakes, chilli powder and stock.

Pour mixture over the chicken and bake at 350F for 1 hour or until done. Baste occasionally whilst cooking.

For that authentic barbecue taste, cook in the oven for 45 minutes and then transfer immediately to the outside grill to finish cooking.
